Farm Raised Elk Meat Thank you for taking an interest in farm raised quality elk meat from Meadow Creek Elk Farms. We believe in raising premium elk in a natural environment with a diet of grasses, forges and minerals. We monitor our herd health and raise them without growth hormones or antibiotics.
Our farm has been issued the Elk Quality Assurance Seal from the American Elk Products Board for compliance with quality standards established for raising elk for meat consumption. We cull mostly females, at the ages of 3 and 4, since studies have shown that meat is more tender than 2 to 3 year olds. Every slaughtered animal is CWD tested, inspected and stamped with the Wisconsin state approved seal and vacuum packed for freshness. Meadow Creek Elk Farms, LLC is a member of the "Something Special From Wisconsin" program.

Nutritional Value in Farm-Raised Elk MeatFarm-Raised elk meat is a culinary treat. It is a naturally tender, and has a distinctive flavor. Elk meat is very low in cholesterol and calories. A recent Alternative Red Meat Study conducted at the University of WI found that cooked ground elk meat contains 55 fewer calories then beef. When tested, a 3oz. portion of ground elk contained 162 calories, compared with 217 calories for the beef. The study also revealed that the ground elk meat had the lowest cholesterol amount (66mg ) of all the meat studied, which includes beef, turkey, turkey, bison, venison, emu and ostrich. When other cuts of elk meat were compared and tested, (round, rib and tenderloin) additional findings of the nutritional value of eating elk meat were found. Not only is elk meat low in calories, cholesterol and fat, it provides a higher amount of iron then the traditional pork, beef and even chicken. Since elk meat is very low in fat it requires shorter cooking times than other commercially available meats. A 3 oz. portion of cooked elk round has 3.5 mg of iron compared to 0.9mg in a 3 oz. piece of skinless chicken.
